Watch out Betty..

Crocker that is.  Kevin was surprised to come home from work on Friday to find me baking.  I was feeling very domestic that day and wanted to make homemade Halloween treats.     I was not successful with making the icing as I decided to use organic cream cheese and butter.  It turned out to be a lumpy mess and didn’t look very appetizing.  I’m blaming the ingredients.  (that’s my story and I’m sticking to it)  Even without the icing, the cupcakes were delicious!!  Recipe is below and highly recommended.

Pumpkin Cake
4 eggs
1 2/3 c. granulated sugar
1 c. vegetable oil
30 oz can Pumpkin Pie Mix
2 c. all purpose flour
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda

8 oz. package of cream cheese, softened
1/2 c. butter, softened
2 c. powdered sugar
1 tsp. vanilla

Preheat oven to 350.

Using an electric mixer, beat wet ingredients plus sugar until light and fluffy.  In a separate bowl, mix together dry ingredients.  Add the dry to the wet and mix until smooth.  Bake for 30 minutes.

To make icing, mix all ingredients with mixer until smooth and frost.
