Watch out Betty..

Crocker that is.  Kevin was surprised to come home from work on Friday to find me baking.  I was feeling very domestic that day and wanted to make homemade Halloween treats.     I was not successful with making the icing as I decided to use organic cream cheese and butter.  It turned out to be a lumpy mess and didn’t look very appetizing.  I’m blaming the ingredients.  (that’s my story and I’m sticking to it)  Even without the icing, the cupcakes were delicious!!  Recipe is below and highly recommended.

Pumpkin Cake
4 eggs
1 2/3 c. granulated sugar
1 c. vegetable oil
30 oz can Pumpkin Pie Mix
2 c. all purpose flour
2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda

Icing:
8 oz. package of cream cheese, softened
1/2 c. butter, softened
2 c. powdered sugar
1 tsp. vanilla

Preheat oven to 350.

Using an electric mixer, beat wet ingredients plus sugar until light and fluffy.  In a separate bowl, mix together dry ingredients.  Add the dry to the wet and mix until smooth.  Bake for 30 minutes.

To make icing, mix all ingredients with mixer until smooth and frost.

busy weekend

Kevin and I had a great weekend. We went to the Zoo and ended the weekend with a charity ride.  Kevin and Makya also enjoyed a relaxing boys night in while I went out to a fun girls night.

Poor Kevin, the birds won’t be his friend.  Maybe that guy in the background will be his friend.

I had a great time catching up with my girlfriends this weekend.  Everyone looked wonderful but of course my eyes are closed in all the pictures.

Kevin rode 100 miles and I completed 27 miles.  I wiped out at the finish line but I’m okay just a bruised ego.  This was Kevin’s longest ride and he did awesome. This year’s ride set a record raising over $200,000.  Thank you again for your support and donations.

Ran a trail 5k this past weekend that a friend of Kevin’s organized to raise money for a local park.   Congratulations to my friend Jennifer for completing her first 5K.  She did an awesome job.

Ninja School

Kevin and I celebrated our two month anniversary attending Ninja School.  Just kidding…we went to Colorado and decided to go rock climbing.  I wanted to post a video to show everyone but I couldn’t figure it out so I guess these pictures will have to do.

The tofu was so good that Kevin even had some.  We went to some of the best restaurants below are my top picks.  If you are into eating healthy you have to try Water Course.  Kevin and I just stumbled upon this place but it was amazing.

One month anniversary.

One milestone down about a million more to go!!  Married life is going great.

Kevin has another race coming up this weekend and I will be the happy wife cheering my husband on as he works to accomplish his goal.

I’ll do my best to update again after Kevin’s race.

Getting ready for the wedding was a really fun experience.  Kara and her mother hosted breakfast for all the girls and then we spent the whole morning lounging around.  If you got a chance to look at the wedding pictures then you can guess that I had professionals help me get ready for the wedding day.  As I normally have just chap stick on.  Renee and Brittany from Two Fishes Artistry came to the house and got all us girls and my mom ready for the big event.  I highly recommend splurging and getting professional for the big day.  Renee and Brittany helped us look our very best and it was one last thing for me to worry about.  I was able to relax and enjoy everyone around me.

Renee and Brittany make a wonderful team.  I wish I could hire them everyday.

hairMy hair which I absolutely loved.  The hair ornament was my “something old and borrowed”.  Kevin’s very talented sister-in-law, Courtney, made it with jewelry she had collected over the years.  She made it for her wedding and I asked her if I could borrow it when I started planning the wedding.
